My Plant Collection

I am surrounded by loved ones who were born with a green thumb. And it's just not fair! I try so very hard to keep my plants alive. But it seems like they just don't like the way I treat them. They either get too much sun, too little sun, too much water, too little water, you get the idea.

This past weekend, I decided to transplant and divide some of my greens. Before doing so, my spider plant was squeezed into a tiny rectangular pot and was still planted in the ground soil from my parents' back yard. It was time to divide that baby up and get her in some fresh dark soil. I also transplanted my peace lily because she was looking like death. Brown tips and yellow leaves. What a lovely combo! Anyway, here are some pictures of all my plant babies that I try so hard to love.














That's all my plants! I am considering planting a small garden this spring...but with my luck, it might turn into a disaster. It sure would be nice to have a constant supply of fresh produce this summer...

Valentine's Day Edition: 2012

Hi Everyone!

Yesterday was a lovely day in the casa de Focht. I went into the kitchen to pour my cup of coffee and there was a cute bouquet of pink, yellow, and green flowers with a sweet love note to get my day started.

When I got home, the bouquet had magically changed into a dozen of my favorite pink and yellow roses. We enjoyed a relaxing evening planned by my wonderful husband. He made one of my favorite meals, spaghetti and meatballs. The rest of the night included my very own personal spa treatment, massage and and candle lit bubble bath included.

I love love and all things mushy and sweet. So Valentine's Day is always a good day to me. If you are single, I hope you enjoyed your day of single awareness. I know it sucks.

Chocolate Chip Baked Oatmeal

Oh Pinterest, how I love thee. You have given me so many new recipes to try. Today I tried this new one found here on my food board.





CHOCOLATE CHIP BAKED OATMEAL




1/2 cup oats
1/4 cup milk
1/4 cup unsweetened applesauce
1/8 tsp salt
3 tsp. brown sugar
1 tbs. chocolate chips

Mix everything together and pour into a greased ramekin. Bake for 20 minutes at 380 degrees. Then set oven to broil on high for two minutes. Remove from oven, let cool for a few minutes before removing from dish and indulging.



My recipe was adapted from Pinterest, but was originally found on this awesome blog all about healthy desserts. Visit her site at Chocolate Covered Katie.

My reaction? It was a delicious, hearty breakfast that I will only prepare on a Saturday morning because I probably would never take the time to make it during the week. It did not taste like a chocolate chip cookie, but rather a thick oatmeal with very little sweetness. Next time I make it, I might add some nuts for an added crunch.
